Pork Tenderloin – Turbocharged!


As a purveyor of BBQ, we love all cuts of the pig….bacon, pork belly, pork ribs, pork shoulder, etc. The Pork Tenderloin is often overlooked as an item for the pit.

Pork Tenderloin is very tender and easy to cook, but it contains less fat than other pork cuts and can lack flavor. However, it is possible to “Turbocharge” your pork tenderloin with a citrus marinade and an orange-chipotle finishing sauce!

Place your tenderloins in a ziplock bag with 1 cup of Orange Juice (1 cup per tenderloin)….Coat well and place in the fridge or cooler overnight. Remove tenderloins….pat dry and coat lightly with Tequila Sheila Pork Rub. Place on cooker at 275-300 degrees for 45-60 minutes….or until internal temperature is 145-150 Degrees.

Prior to cooking the tenderloin, prepare the Orange-Chipotle sauce. In a medium-large saucepan, melt 2 tablespoons unsalted butter and sauté 1/4 cup diced onion until soft…add 1 cup dry white wine and boil until reduced to glaze (about 10 minutes). Add 4 cups of orange juice and 2.75 cups of chicken broth. Boil until reduced to 1.75 cups (about 45 minutes.). Remove from heat. When ready to serve, warm sauce and add 1 tablespoon diced canned smoked chipotle peppers, 2 tablespoons chopped cilantro, and 1 tablespoon chopped chives.

Slice tenderloins, spoon sauce over the meat, and serve….TURBOCHARGED!
